On baking…

I don’t.  I mean, for the most part – I steer as clear of the kitchen as much as is humanly possible.  Unless I am forced to be in there for one reason or another – say dishes, cleanup, general grazing throughout the day. 

But I do make one thing that I am usually exceptionally proud of, and that is this: my Banana Walnut Bread Extraordinaire.  Yes.  It’s that good. Yes.  Those are chocolate chips you are looking at.  You're welcome. 

But don’t thank me – thank Betty Crocker.  And some tweaking. (Ok, thank me for the tweaking)  Moist.  Dense.  Warm.  Amazing.  Made with oodles of bananas and “stuff”.

I'm with you, I don't enjoy cooking either, but our kids have to eat. Let them eat cake! and Banana Walnut Bread! It looks divine!

This looks delicious!! Okay, I make my mom's banana bread recipe every year at Christmas. My husband came up with the idea of putting chocolate chips in it...and we love it. BUT...the chocolate chips sink to the bottom when you bake it! HOW in the WORLD did you get the chocolate chips on TOP???

Alyson, I finally figured out to mix them through with the batter, and then sprinkle them on the top too. They don't melt and it's pretty too!

Aww, shucks Val! I just double the recipe, keeps lots of those bread tins on hand, and put em' all in the oven at the same time. Then I freeze two, and we work on eating the other two. Makes a great, easy breakfast on Sunday mornings when we're running out the door to church!
